[Plugin: Contact Form 7] Specify ‘from’ field?

How do I specify the ‘from’ field?
In ‘Tools > Contact Form 7 > Mail’, there is a ‘from’ field but no matter what I put in there, it’s coming from a dev email address when we were building the site out. I’m know it’s probably something simple but if you could help me out I’d be appreciative.
