wp_list_comment, array, and callback

Is there a way I can add a callback and an array on wp_list_comments? I’m using (array('reply_text'=>'Reply') and callback=mytheme_comment?

P.S. On the https://codex.www.ads-software.com/Template_Tags/wp_list_comments page, it says that callbacks are not recommended. Why is that? Plus, what kind of effect will this have on my wordpress site?
