[Plugin: Contact Form 7] 2 Different Forms, 1 WP Install

So I can make 2 forms with ‘Contact Form 7’ and have the ability to changes values in the fields?
I also need to be able to change the select menu options and for those to go to different email addresses.

Would I have to get into the script to do this?

Also, I’d like either the telephone OR email to be mandatory. So long as they fill out one of them, it’s fine.
Is this easy to configure in the script?
