Hi Isabella,

There’s no plan to add this feature to our WooCommerce core at the moment. Since WordPress only supports text editor revisions, but not metadata (such as price fields etc.); this doesn’t help much with product post type as the fields are the more important data. When WordPress is added with support for metadata, we will consider adding the feature.

Meanwhile, adding the revisions for the text editor can simply be done with adding the filter as I mentioned earlier.
