Image Link Options Disappeared in Gutenberg?

There simply is no link option in the right hand panel to edit the image block. It’s super strange because I know I’ve seen it there before.
I also don’t get the option to link it when I first upload it, it jumps straight into the page. Logged in and out. Cleared my cache. Any other ideas?

The link option isn’t on the Block setting side panel, which is where you’re looking in that video. It’s in the Block toolbar at the top of the block. You should see it when you click onto that block. Here is the link to the page with all the details on the image block.
