If the order has been paid and then canceled, refunding the order will automatically restock. Otherwise, use the following code to achieve this:

You can add that code to your site using something like https://www.ads-software.com/plugins/code-snippets/

As for hiding the out-of-stock variations, you should be able to accomplish that with the same Code Snippets plugin above and the code mentioned in the first section of this article:

Unfortunately the code for the zero quantity variation it doesn’t work in my case..
I have used it at the past also. I don’t know what else to do.

If the code I’ve linked to does not work then you may need to enlist the help of a developer to achieve this functionality. If things do not change when the custom code is added, there may be a caching issue preventing it from being seen or used. Please ensure all caching and/or CDNs used to speed content delivery are flushed before testing. Also, are you seeing any errors in the site logs? WooCommerce → Status → Logs tab is where you will find these if they exist.
