    Is there a way to have WooCommerce use a different WordPress page type for the Product pages (rather than default)?

    No, that’s not it. The product page is based on a WordPress theme template. I have several different templates in my theme with different banners, navigation, etc. Right now the product page is automatically using the default page template. Can I change that?

    I understand you want to change the default page template for the product page, you cannot change the page template using the editor, however, you can customize the page template via PHP. There are a ton of tutorials on how to accomplish this but here’s a couple:
