Apple Pay & Google Pay: Make Phone Number optional

Dear Woocommerce Support,
thank you for this great plugin, it works seamlessly in my shop. I have activated both Apple Pay and Google Pay.
When paying with Apple Pay, I cannot delete my phone number. Could you make the phone field optional?
In Germany, it is not allowed for data privacy reasons to have a mandatory phone number field during the checkout process, unless required to fulfill the order (usually express shipping requires a phone number, but standard shipping doesn’t).
In any case, it should be up to the user to decide, whether to add a phone number to an order or not (privacy by design). A prefilled field would be okay, but there needs to be a way to delete your phone number before authenticating the payment.
When going through standard checkout page (Stripe Standard), the phone number is optional. If those settings could be inherited to the Apple Pay & Google Pay checkout, it would help a lot!

As I understand, you want to make the phone number option from the contact info section when a user checks out with Apple Pay or Google, as shown below, is that right?
Link to image: https://i.ibb.co/k3zTKDM/apple-pay-opt.pngIf so, then those fields are added by Apple and Google directly, and those can’t be removed via WooCommerce or WooCommerce Stripe.
