Can I Change Default Sort To Begin With Specific Category?

On my home page I would like my products to be sorted by category with one specific category showing before the others. Is this possible?

Yes, but that is a job that falls to your theme. What theme do you currently use?
You can also try and build up the product overview using the built in shortcode. It allows you to control the product output with categories.
