Archive page

I want to set up archive pages for different subjects. Products, Bikes, News etc. I want a list of excerpts in the category to show up on each category page. what is the best way to go about doing this? Attached is a link to what i would like to do. Doesn’t have to be as flashy but its the idea i like. Thanks
