First of all, this is just a WARNING. It is NOT an error. AMP pages will still get indexed and displayed in Google’s search results. There might be two reasons for having this issue on the Google search console.

1. If you are a jetpack or Yoast user, you need to enable some settings. So please follow this tutorial: https://ampforwp.com/tutorials/article/how-to-solve-image-size-smaller-than-recommended-size-in-amp/

2. In the structured data plugin, you need to check the default image size. So please follow this tutorial: https://structured-data-for-wp.com/docs/article/how-to-solve-image-size-smaller-than-recommended-size-in-amp/
