WooCommerce core does not have a feature that can manage the stock status of external/affiliate products.

The stock status on the supplier is managed via their external database so you could ask them if they have an integration to connect stock data to your WooCommerce store via API.

If that’s not available, but you still have access to the external database, you can build a custom solution. If you need help from a developer, we’d highly recommend the services listed at https://woocommerce.com/customizations/.

Or you can manually update the current number of items, let’s say every hour or less, depending on whether you want to be as accurate as possible, with a WordPress Cron task.
