I have just read that document but it doesnt mention files which reside in the /includes folder, will these still work?

Sorry that wasn’t clear. Only the files you are altering need to exist in your child theme’s edd_templates/ folder.

Having read the docs again, from my understanding, you can only move files which are in the edd_templates folder to start with.

The file I wanted to change is in the easy-digital-downloads/includes/checkout folder

The template files from EDD that can be moved are located in the plugin’s templates/ directory.

Any other file, like the ones in the location you mentioned, can’t be copied over to be changed. You will need to use the available filters/hooks if you wish to change data or the look of a page.
