Email Link and “2 photos”

Hello!

I’m new to this and I’m trying to customize my theme for the 1st time. I did a casual search in the css and poked around in the customization and appearance areas but I couldn’t find any thing that I though would address my problem. Maybe I don’t know the terminology well enough

1. I want to get rid of where it shows my email address on every post. I’d rather it not be on there anywhere at all.

2. In this theme (Twenty Ten), it shows a nice little thumbnail in the gallery type post. But it shows “This gallery contains 2 photos.” The words “2 photos” is linked to open up the post. But there are not 2 photos in there. I’d like to change it to something more accurate, such as “See more”.
