    The problem come from the “Load Terms” setting that is enabled in your Taxonomy Terms field. This setting will override the selected value of the field, and inject the current post terms, no matter what. You should disable it if you want to display a Default Value.

    In ACF & WP post meta, there is a logic that allow to know if a meta has been already set or not (null in this case), so ACF can display a “default value”. But with WP Terms, such logic doesn’t exist, terms are either set or not. So the post terms will be always injected with the “Load Terms” setting.
