This is more than one site using Gutenberg blocks. The revisions view option no longer appears in the post editor. I tried disabling the other plugins/themes and making sure it’s enabled in wp config. But it’s just gone.

I can confirm the revisions themselves are NOT gone. There is a database plugin on this site and I can see the revisions in it. So they do exist, but we can no longer view from post editor. How do we get them back?

I have tested this in admin on more than one site.

I can see the revisions in my projects in the Block Editor without any problems.

Just to be sure, since you are still using the term Gutenberg: you are definitely looking at the editing of a page and not a template in the Site Editor?

In addition, plugins that you use could also hide this. Deactivate them all as a test.

It looks like it might be something in Code Snippets. Not the plugin itself, even in the child functions php it is blocking them. But I don’t think it always did. There certainly nothing in there that SHOULD block them. Did something change in the revision feature that an old snippet might not be able to handle?
Oddly, I tried disabling them one at a time and that did not bring the revisions back. Only completely disabling them all worked.

I am not aware of any such changes. Of course, it depends on what kind of codes are contained in your code snippets. One of them will probably slip in here.
