Problems after updating from 8.5 to 8.7 and activating UPE

We updated the WooCommerce Stripe Payment Gateway from 8.4 to 8.7, because they are essentially forcing us to.
After the update, existing customers seem to get blocked from paying by stripe. New customers work fine, only existing customers trying to use saved up payment info.
Our CS agents are also trying to switch to our customer users and complete checkout+payment in their stead, but get the error message.
Error message displaying in red at top of checkout page when clicking on Order Now
“There was an error processing your order. Please check for any charges in your payment method and review your order history before placing the order again.”
This problem started right when we updated the plugin. Never had this before.
