Can you take a credit card as payment but process it offline?

I’ve installed MarketPress Lite on a new WP site, and now I need to find out how to setup the ecommerce to handle this scenario:

We don’t want to actually process a credit card transaction online. When someone “purchases” a product (puts it in the shopping cart and checks out), we’d like it to store their credit card information and send us an email with some info about the customer and their purchase. Then we’d login and retrieve their credit card details and run it through our credit card machine in our store. This site will be a low volume (but high priced) online restaurant equipment catalog, so we don’t want to incur the extra cost of monthly merchant service fees for online credit card processing.

Can this be done? If there was a manual to refer to, I’d look it up, but this appears to be a very poorly documented plugin. If this can’t be done, I’ll move on to try another one …
