Wrap & in a span for generated titles

Hi,
I am wondering if anyone has any insight on how I might go about wrapping an ‘&’ in a span to achieve this effect:
<span class="amp">&</span>

I am trying to do this on generated titles like this:
<h2><?php echo $category->name;?></h2>

Any help would be greatly appreciated.
