EditFlow Authors Ability to Change Post Status

Hello!
Our website has multiple authors and a few editors. We use EditFlow and combine default Post Status’ from WordPress with EF status’ (Pitch, Draft, Preview etc.) We’re currently having two issues.
From my understanding, the system should work such that our authors can submit an article into the system as either “Pitch” or “Draft” (freely changing the status between those), and when they deem a post fit they can hit “Submit for Review”, at which point the post becomes “Pending Review” and only the editors can further change the post status. Editors can kick a post back into “Waiting for Feedback”, at which point the author can again “Save as Draft” or Submit for Review.
Currently, the author can only submit an article under “Draft”, and the only options which appear on a page to edit articles are “Submit for Review” and “Save as Draft”.
The other, perhaps bigger problem, is that an author can use the “Quick Edit” option to change a post to any status they choose. For example, an author could change a post to “Ready to Publish”, “Pending Review” or “Pitch”. They are simply presented, under “Status”, with a drop down menu of every status available. An author should not have these privileges. Thanks in advance for any help!
