Ok now I am seriously freaked out! I have deleted the plugin in an attempt to stop it appearing in my sidebar, but it is still showing on my sidebar despite not existing on my site as a plugin!

    Hi Helen,

Please read here and here. Info on how to use the shortcode is there.

If you uninstalled the plugin, then it must be something else showing up in your sidebar.

Thank you. The issue of the plugin appearing when I deleted it is now resolved. I would like to re-install it, but my question over how to post it to a page instead of a widget is not resolved. It still shows only the latest post, despite my settings. Can you please advise?

    No problem.

You can do that by using the [wpp] shortcode. The links I posted before will give you more information on how to use it and what parameters it accepts so you can configure it to your liking.
