[Plugin: SendPress] How do you I change servers?

There are some third-party plug-ins you can find for WordPress that allow you to change your SMTP server for all of WordPress. It can be both good and bad depending on what other uses you have for email on your site. You could certainly give one of them a try, but they are not officially supported by SendPress.

Once the Pro version of SendPress is released there will be a custom SMTP option built right into the plug-in, which will be supported. Hope that helps.
