Unique IP's only 1

I’m only recording one unique IP. I have lots of different originating IP’s though. I believe it thinks the unique IP is my server IP.
How can I switch the values so the unique IP’s track correctly?
Does this also affect the filter IP function? It seems to as I put in my IP (not server IP) and it will continue to show it.
