How to Hide Personal Options and Post by Email in profile?

    You can only hide this about custom options. Find a css selector with Webdeveloper tool in Chrome or firebug in Firefox and add this to the global options artw of Adminimize. You find hints in the FAQ of the plugin page to this topic.
