Managing new subscriber emails – very confused!

Firstly I am really sorry, I am a complete WordPress novice. I have just started using it to manage my employers’ website, using the admin login that he gave me on a solely web-based basis.
I am OK with HTML but the WordPress layout is completely alien to me. He has asked me to stop the auto email going to him whenever someone subscribes to our newsletter. Simple right? Apparently not for me!
I have found the appropriate email, and installed and activated the Disable New User Notifications plugin. This seems to be running with no problem, yet has not prevented these emails from going through. Then I tried deleting the email in the ‘Add/Manage Email’ section, but this has just deleted the template, resulting in the boss now receiving blank emails every time someone signs up.
I can’t work out even how to re-add the template (I don’t see the blue ‘Add’ button underneath the description box and am not sure why, and still haven’t stopped these emails from getting through. Can anyone please help? I am aware I may need to update the version I am using but am not 100% sure how to backup all the files before doing this – again, I want to emphasize that I am coming to this completely new, without any clue how the site is built – I haven’t even worked out how to access the html code of the site yet!
Any advice would be very much appreciated. I have searched through previous forums and can see people have had similar problems, but seem to have had success with the plugin.
