Disabling first option in select box field

In the interest of saving space on my site, I’ve hidden the labels on my form and have set default values instead to show what you should enter into each field.
This is difficult to do with a drop-down select, because there’s no possibility to disable the first option in the list on this plugin. Does anyone know a way around this?
