    Will it be selling the optimized images though?

    Sell Media keeps the original high resolution file in a protected directory on your server and generates all downloads/purchases from that one protected, high res source file. As long as that plugin doesn’t somehow move the protected file, you should be fine. I’d recommend testing, checking the wp-content/uploads/sell_media/ folder to make sure that plugin isn’t attempting to move it.
