How does WC treat stylesheets

Just updated to the latest version of Woocommerce — on my test site, thankfully, and I see that’s it’s messed up my stylesheets big time and have lost customizations. I have a child theme set up with Canvas and and a custom.css so thought I was safe, but apparently not.
Is there some link to how WC treats stylesheets? I’m having trouble finding info. I seem to remember there used to be a way to turn off the WC styles and just use the theme? Where does the program point to which stylesheet it’s using?
