Organizing uploaded photos into directories

I’m building a site which will include a large number of photos taken over many years. Can you point me to something I can read to help me understand best practices with regards to managing and organizing photos?
I’d like to learn the “right way” to do this sort of thing, so this is my general question. A more specific question follows:
As I was experimenting with Foogallery, I uploaded a bunch of photos. Most appear in the current year/month folder (in the content/uploads dir), however a few appear in a year/month folder from when they were originally taken (e.g. 1986/02). I am creating posts which I date stamp in the past, approximately when the photos were taken. I cannot seem to figure out how to reliably have the photos uploaded to a year/month folder that makes sense. Help?
