Internal Server Error when upgrading submissions table

I am trying to upgrade from version 2.3 of the plugin. I’m doing it in steps, as my first attempt to upgrade straight to the latest version removed all my forms.
When trying to upgrade from v2.6 to 2.7, I get an Internal Server Error when I try to upgrade the submissions table.
The upgrade notice says it may take several minutes, but surely most webservers (especially shared hosting) will timeout before that?
Is there any solution to this problem?
