WooCommerce security fixes only?

Is there any interest in – or has anyone already – forked WooCommerce to a stable, security-fixes only style distribution?
Since October last year we get a release every 18 days on average. That’s great in terms of all the new features, etc. But it’s also difficult to deal with for theme developers, small business owners and admins.
I think a functionally stable version with security fixes would make life easier for a lot of folks.
Is there something like this available? Any appetite for it?
