Multiple delivery options for Local Pickup

Hi,
Am building a commerce site that will have 3 shipping options, based per order and the client chooses on checkout:
- Counter to Counter FREE
- Counter to Counter 2/3 days
- Counter to Counter Overnight
How would one go about setting this up in the shipping?
