Empty 404 logs

I recently installed this plugin on our english and our spanish site. Like normal (I’ve used this plugin dozens of times) the english site started showing 404s in the 404 log right away.
I waited a couple days and the spanish site is still showing nothing in the 404 error log. I KNOW we’ve been having 404s and I’ve triggered some myself.
Why is it not recording them? We do have a 404 redirect to a 404 page (via a plugin) but the same plugin is enabled on the english site and the english site is still recording 404 errors within this plugin.
