Sales are inside the posts and postmeta tables (orders are a custom post type).

Thanks, Mike! Are those the only 2 tables that must not be overwritten on the live site? How about woocommerce_order_items and woocommerce_order_itemmeta?

Is there anywhere that has a walkthrough of this process? I am on Wpengine with a woocommerce site ready to deploy to live without overwriting current sales, orders etc. Wpengine were less than helpful.

No walkthrough; in most cases moving data from db to db is dangerous and not recommended. Better to test file/theme/plugin changes on staging and copy those to live leaving data as is.

Orders tables too yes. That doesn’t actually leave you much to migrate, so it’s probably not worth it!
