My product page only shows “out of stock” when I select the specific variation that is out of stock. I’m thinking you may have something else causing this issue.

Try temporarily switching back to the WordPress Twenty Sixteen Theme, or Storefront, and disable all plugins except for WooCommerce. If that resolves the issue, then slowly re-enable features until you find the one that’s causing the conflict.

Also – you could maybe set some default on the variable product so it appears in stock from the start.
