change tab name

Could you tell me what exact tab you want to change? It would be best if you could make a screenshot and show it to us and we will see if that can be changed. If this is something we can observe on your site please paste link to it.
Do you mean the Products in admin dashboard menu? If yes, then you can use plugin translation files and create fake translation that will change that word. However you have to remember that it will change every single instance of it.

There are premium plugins that can change any text on the admin panel. One of them is the Ultimate Branding, it works on a multisite installation too.
