Copying new data from production site to update development site

I am the webmaster for our church, and the WordPress site is in dire need of update. Several months ago I backed up the database and files from the production site, set up a new copy of WordPress on the server, and imported the database and all the files.
Since then I have added and configured a new theme, added a number of new pages and graphic files, and worked the development site into a shape I am happy with.
While all this was going on, the production site was still being updated, of course. Now I would like to export from the production site just the posts and images that were added after I set up the development site, import them into the development site to bring it up to date, then move the dev site back to the root web directory of the server to make it the new production site.
Is there a way to do this? Or am I asking for trouble, and would it make more sense simply to stick to the current production site and replicate the theme and other changes I made while in the dev site?
