programmatically fetch custom field contents

Hi!
Using your t-shirt printing example, I would like to programmatically retrieve the custom “name_on_tshirt” and “gift_wrapt” options and pass them onto the printers without relying on the automated email. Do you have a function I can call to receive custom field entries based on order->id and product->id perhaps?
