Change select data by date

I’m looking at Ninja forms for a couple of projects. I’m looking for a way to change SELECT data based on the current calendar date. The concept would be that if today is 2/18/2018, then I’d populate three select dropdowns of ‘2018-03-01’, ‘2018-04-05’, and ‘2018-05-03’. This would let me roll selections based on today’s date.
I’ve tried some substitution tricks, and looked at the conditional logic extension, but I’m not sure that will help.

Any ideas?
