I had spent three days trying to learn php and Javascript just so I could add these features which should obviously already be in the checkout, however on the third day of constant failure and crashing my site I found this amazing plugin which did almost everything I wanted.
There was this certain feature that I wanted in the plugin but it conflicted with my theme, however after a few emails with Bhavik the developer he went out of his way to develop me a plugin which fulfilled my needs.

This plugin solves a small but important problem…sometimes the customer wants to change quantity or remove an item at checkout. Right now, they would have to go back to the cart to do that. This is a great plugin which adds a great feature to WooCommerce. Also, the developer was very responsive in making some modifications for me.

One minor display issue:
My products have a 1 appended to their titles, which I assumed was the product quantity of 1 having no padding after each product.
I fixed the table spacing with the css code suggestions by gbruzzo in the comments here (thanks gbruzzo!), and by trying different values from the suggested values.
I ended up using the following settings in my theme’s css area:
.woocommerce table.shop_table td.product-name {
display: flex;
align-items: center;
flex-direction: row;
width: 87%;
margin: 0px 0px 0px 0px;
}
.woocommerce table.shop_table span.cqoc_product_name {
margin-right: auto;
padding: 0px 0px 0px 0px;
}
.woocommerce table.shop_table div.quantity {
margin-left: none;
padding: 0px 0px 0px 0px;
}
