At first I got stuck because I didn’t want to set a default image for posts without images and this is not possible… and only after this that we can assign images to categories.

Very customizable. You are able to tell it what images to look for and use before picking a default featured image. You are able to set different default featured images for different circumstances (e.g. different categories).
If you are struggling with JetPack’s Post by Email, this plugin can really help by telling WP to use your attached image as the featured image.

I searched everywhere for something like this, and finally I found it! It allowed me to create a default “featured image” for existing posts and all future posts. Awesome!
