Categories not working

I just moved my site from wordpress.com and one of the things that broke along the way is my post categories.

I was using two categories to display my posts on separate pages as if they were individual blogs, but now all of my posts appear in the same place, despite my menu structure showing the categories correctly. Also, when I go to the categories page and click view on any category it shows me all my posts.
I created a new category and a single page to go with it as a test, and the same thing happens.

I’ve considered deleting the categories and adding them back again, but in light of the above this seems unlikely to work.

As a side note, I’m still able to view and filter all my posts by category correctly in the dashboard.

1. Currently I have one blog in my WordPress account which is linked to one domain. I want to create another separate blog and have it linked to a different domain. Is this possible with my current WordPress account or do I need to create a new account?

2. I want to test out a new template (tweak some of its coding to customize). My current WordPress account already has a live website blog which I don’t want to touch. Is there a way I can do this in a sandbox environment or something?

It seems WordPress can only handle one blog in one WordPress. Is there a workaround?

Three Blogs, One Account

I maintain three separate blogs but would like to manage them from a single Administration Panel, if possible. I installed the blogs to my host server with Softaculous and ticked the checkbox for Multisite, but I still seem to have to log in to each blog individually, so I’m afraid that something isn’t right. I am early in this process and have not made any posts yet. Should I uninstall and try again?

And just as important, that the New Site Admin WON’T be able to access the White Label CMS settings to changes or to activate/deactivate it from the plugins menu?
