500 errors that redirect to requested page (appear to be for logged-in users)

Since migrating my site to live and enabling the latest version of WP Rocket, I have been getting 500 server errors that immediately redirect to the actual page I was trying to see. This appear to only be happening for logged-in users, but I am not sure.
It seems like this might relate to PHP memory limits – I have some issue on my WordPress configuration that is causing it to take an extremely large amount of memory, but that is something I have to deal with separately.
I can’t seem to get these PHP errors to show up in the regular PHP error log (which I have enabled), the WordPress debug.log under wp-content (also enabled), the email notifications of fatal errors that are new to WordPress 5.2, or the Apache error log. I am currently using mod_php to serve PHP pages under Apache.
I am posting on here to see if there’s another way I could get logging details on these errors to appear. That way, I could check if it is a memory issue, or something else.
