Make sure you are using the latest version of the plugin, also the php version must be 5.4 or later.

To see what the exact cause of the error is, you need to look at your php error log. If you don’t know how to do that I suggest you ask your hosting provider to take a look.

I am having a similar situation when I try to add a Field Group.

When I add it, it appears in the MySQL database. Looks fine, but the description is NULL. I have edited that and it doesn’t seem to make a difference.

And the only thing I can do is to go into phpMyAdmin and delete the new field group. Once I do, everything is fine.

I am using Version 1.8.3.2 of the plug in on WordPress 5 – which could be the culprit as it is causing a bunch of grief. My PHP info is below the error log – using PHP 7

Plan to buy some add-ons, but I just found your fabulous plug-in this morning.

    This from the error log.

OK, where do you see the 500 error? After you try to update the group? There isn’t anything in the log that would cause it, but you’ll probably have to look in the server’s php error log to see it.
