500 internal server error during/after update

Hi there.
My site was working ok this morning, using 2.5.8 of AIOEC.
Thought i’d better update to the latest version of AIOEC. I did this via clicking on ‘Update’ from the GUI in the wp-admin. This failed with a 500 Internal server error (was a bit slow doing so though).
Fair enough, I thought, so I left it on 2.5.8 for now.
However, now, every time I now try to ‘Activate’ the AIOEC plugin the site fails to load with a 500 internal server error.
I have disabled all other plugins, and gone back to default themes. Everything else works fine, until the moment I activate the AIOEC plugin. Then 500.
I have also found an upgrade folder in wp-content relating to AIOEC 2.5.10, not sure if that’s a symptom or related.
Please help – this is our local school website and they rely on the calendar – and this is such a great plugin!
What evidence/logs can I get that would help diagnose?
