Hello @atmercato for the body color add this CSS Line:

body{color: #hexhere;}  
h1, h2, h3, h4, h5, h6{color: #hexhere;}

The second thing you are asking you can do the following:

1. Custom CSS

.topbar-widget.widget_icl_lang_sel_widget .widget-container ul li:before{content: unset;}
.topbar-widget.widget_icl_lang_sel_widget .widget-container ul li{border-bottom: none;}

2. Do the following. Create a menu as you already have (topbar menu you are showing with a widget) and go to the WPML Settings and add the language switcher to that menu.
