Add an extra email field on checkout and bcc the order to it

To get an extra field on the checkout page, you could look into using an extension like https://www.woocommerce.com/products/woocommerce-checkout-add-ons/. As for getting the order confirmation email to go to THAT email address, you’d need to have that custom developed – I’m not immediately familiar with a plugin that would do that out of the box.
