Add Custom Theme

I’ve created and downloaded a custom jQuery UI theme. I’ve added ‘custom’ to the admin dropdown. How do I make the connection / Where do I drop my custom UI folder?

I’ve tried dropping it into the themes folder under CF7 and under the js folder under Datepicker, but I’m not sure what code to add or where to add it in order to actually make the connection between selecting ‘Custom’ from the admin panel dropdown and loading the theme.
