Add products attribute to Gutenberg Blocks newest products

This would be possible by editing the templates of WooCommerce or using custom code.

Are you saying the suggested method above will work with Woocommerce Blocks?

Actually no, that would not work alone. You can use that as a base but you need to integrate it with the filter woocommerce_blocks_product_grid_item_html from WooCommerce Blocks to edit the output of Product blocks: https://github.com/woocommerce/woocommerce-gutenberg-products-block/blob/master/src/BlockTypes/AbstractProductGrid.php#L336-L350
