“Add to cart” with variable product

Hi. Wondering if someone can point me in the right direction. My site has Simple products and Variable products. On my Shop page, both types currently show “Add to my cart’ buttons (I am using a plugin for this). However, I would like the Variable products to show something akin to ‘Click to see options”. My plugin allows this (and I can do it), but then when the customer has made a choice, the button still says “Click to see options”. What I would like is for the shop page to say “…options”, but once chosen, the button says “Add to cart”. I have looked at doing this with php, but seem to have the same issues. I hope this makes sense; any help appreciated.
